The White Negroni was born in 2001 at the Pegu Club in New York City, created by Wayne Collins during a tasting event. While trying to recreate the classic Negroni but missing the key ingredients like Campari and Sweet Vermouth, he opted for the French gentian liqueur Suze and Lillet Blanc. This substitution not only provided a startling visual shift from deep red to pale gold but also shifted the flavor profile from the fruity sweetness of vermouth to a more floral, herbaceous, and intensely bitter experience. It has since become a staple in modern cocktail culture, representing a sophisticated departure from the traditional recipe, inviting the drinker to explore a cleaner, sharper, and more refined botanical landscape.
