The Tommy's Margarita was created in the 1990s at Tommy's Mexican Restaurant in San Francisco as a modern interpretation of the classic margarita. The cocktail was developed by bar owner Julio Bermejo.
Unlike the classic margarita, this version does not use orange liqueur. Instead, agave syrup is used. This change makes the agave character of the cocktail more pronounced and highlights the natural flavors of tequila.
“Some things are not valuable because they are complex; the real value lies in the balance within simplicity”
Tommy's Margarita has quickly become very popular in the modern cocktail world. Thanks to its simple yet balanced structure, it has become a recipe favored by many bartenders.
Today, it is considered one of the cocktails that best captures the character of agave-based spirits, especially when quality tequila is used. Its clean, crisp and direct profile has earned it a strong place among modern classics.
