The Peach Bellini cocktail is an elegant classic cocktail that originated at the famous Harry's Bar in Venice, Italy. This cocktail was created in the 1940s by the bar's founder and famous bartender Giuseppe Cipriani.

Giuseppe Cipriani wanted to make a light and refreshing drink in the summer, when fresh peaches are at their most delicious. He pureed the peaches and mixed them with Prosecco, the famous sparkling wine of the Venetian region. The result is a cocktail that is both aromatic and elegant.

The name of the cocktail comes from an interesting art reference. Cipriani thought that the pale pink color of the drink reminded of the tones in the paintings of the famous Renaissance painter Giovanni Bellini. That's why he named the cocktail Bellini.

The Peach Bellini quickly became a favorite drink of Venetian society. Harry's Bar was frequented by Ernest Hemingway, Orson Welles and many famous artists at the time. Thanks to this, the cocktail gained international fame.

Today, the Bellini is considered one of the most elegant cocktails, especially in brunch and aperitif culture. The natural sweetness of the peach and the light sparkling structure of the prosecco combine to create a fresh and balanced drink.

5 mlSimple Syrup (sugar syrup - optional)

    Add the peach puree to the flute glass.

    Slowly pour prosecco over it.

    Stir gently.

    Optionally, you can add a little sugar syrup.

    Garnish with a peach slice and serve.
