6 FreshGreen Plums
30 mlfreshly squeezed lemon juice
10 mlSugar Syrup
GarnishThinly sliced green plums and a little salt for the rim of the glass

Method

    Chill your rocks glass well by filling it with ice beforehand or placing it in the freezer.

  2. 2

    Add 5 pitted green plums and sugar syrup into the shaker and muddle the plums until the juice is completely extracted.

  3. 3

    Add the gin and freshly squeezed lemon juice to the crushed plums.

  4. 4

    Fill the shaker with plenty of ice and shake for about 20 seconds until the vibrant sourness of the plums is fully integrated with the other ingredients.

    Brush the rim of your chilled glass lightly with lemon and sprinkle with salt (optional crut technique) and fill the glass with fresh ice.

    Strain the mixture through a fine strainer (double strain) to remove the plum pulp. Slice the remaining 1 plum and place it on top of the cocktail.
