The Enzoni is a striking example of blending classic cocktails with modern curiosity. This recipe was created by reimagining the timeless bittersweet character of the Negroni in the early 2000s by Vincenzo "Enzo" Errico at Match Bar in London.
Errico took an unusual path in the cocktail world by using fresh green grapes instead of vermouth. The grapes soften Campari's characteristic bitterness and combine with lemon juice and sugar syrup to create a fresh, vibrant and fruity contrast.

Method

Clean the Rocks glass or shaker and put 5 grapes in the shaker.

Muddle the grapes with a muddle mash so that the natural juice and aroma come out.

Add the gin, Campari, fresh lemon juice and sugar syrup.

Fill the shaker with ice and shake vigorously for about 10-15 seconds, until chilled.

Strain the mixture through a strainer and fine strainer; this will separate the grape particles.

Strain into a chilled rocks glass over fresh ice.
