Ingredients

100 mlPlain Soda (Mineral Water)
1 bunchof fresh lamb ears
1 GreenApple (diced)
30 mlfreshly squeezed lemon
30 mlSugar Syrup
GarnishA thin slice of green apple and a small lamb's ear leaf

Method

    Chill your highball glass well before serving by filling with ice or placing in the freezer.

    In a shaker, add the diced green apples, lamb's ear leaves and sugar syrup.

  3. 3

    Muddle the ingredients vigorously with a pestle until all the juice from the apples is extracted and the vibrant green color of the lamb's ear is absorbed into the syrup.

    Add the freshly squeezed lemon juice to the shaker, then fill with plenty of ice.

    Shake the mixture vigorously for about 15 seconds until the flavors meld.

    Fill the chilled glass with fresh ice. Strain the mixture into the glass using a fine strainer (double strain).

    Finally, slowly add 100 ml of soda to the glass, stirring very gently with a bar spoon from the bottom to the top without letting it fizz. Garnish with an apple slice and a lamb's ear leaf and serve.

🍏Mash the apple and herbs vigorously: Breaking up the hard texture of the green apple and transferring the chlorophyll from the lamb's ear into the syrup creates that enchanting bright green color of the drink.
