
What is Zest?
Zest is the thin colored layer of the outer skin of citrus fruits (lemon, orange, lime, grapefruit). The inner white pith (the bitter layer) is usually not used because it tastes bitter and undesirable. Zest is used to add both aromatic intensity and visual elegance to cocktails.
Zest is a key ingredient not only in drinks, but also in bar garnishes and cocktail garnishes. Especially in classic cocktails, a small touch of zest can drastically change the character of the drink.How to use it?
The zest is usually removed in thin strips with a knife or a zester. It can be dropped directly into the cocktail or placed as a decoration on the rim of the glass.

How to Prepare?
Material Selection:
Fresh and ripe citrus fruits are preferred.
Chemical or wax-coated shells are not used.

Zester: Produces thin strips, high flavor intensity.
Microplane grater: Reveals a light citrus oil, the aroma is more pronounced.
Knife: The traditional method is to cut the peel into long thin strips.
Technique:
The peel is carefully cut so that only the colored outer layer is removed.
The inner white layer (pith) gives bitterness and is therefore discarded.
In some recipes, the zest is thrown into the drink; sometimes it is placed as a decorative twist on the rim of the glass.
