
What is Layering / Floating?
Layering or floating, the use of liquids of different densities in cocktailsin layers on top of each other is a pouring technique. The aim is to present the drink in a visually impressive way, with each layer having a distinct flavor profile. This technique is often used for liquor-based or shot cocktails.
The layering is based on the difference in density of the beverages: liquids with a higher density remain at the bottom, lighter liquids at the top. This gives the glass a colorful and aesthetic appearance. Layering technique is preferred for cocktails and bar presentations where visuals are at the forefront.
How to use it?
A bar spoon or channel knife is usually used for layering. Dense liquid is poured into the bottom of the glass or shaker. Lighter liquids are added on top by slowly drizzling them over the back of the spoon or the rim of the glass. In this way the liquids are layered without mixing.
The technique requires patience and attention; rapid or direct pouring leads to mixing of the layers. Once layering is complete, the cocktail is served and a visually impressive presentation is achieved.
