Dash is a very small unit of measurement used in cocktail recipes. It usually refers to a few drops (about 0.5-1 ml) of liquid and is most often used for bitters, aromatic extracts or intense flavorings. The aim is to add a subtle aroma or flavor without disturbing the overall balance of the drink.
The dash measure is not tied to a precise standard, but usually refers to the amount achieved in a single quick pour, depending on the mouthfeel of the bottle. Small touches make a big difference, especially in classic cocktails.
How to use it?
When using a dash, the bottle of bitters is usually tilted slightly and a few drops are added to the drink in a short, quick motion. In recipes, you may see phrases like "2 dashes", which means that the same process is done twice.
It does not require measuring precision, but should be used with caution as adding too much can throw the drink out of balance.
