
What is a Zester / Channel Knife?
The zester and channel knife are bar equipment used to extract flavors and visual garnish from citrus peels when preparing cocktails. The zester finely grates the peel of a lemon, orange or lime to release the aromatic oils on the surface. A channel knife cuts the peel into thin strips to create decorative spirals or long pieces of peel.
This equipment significantly influences both the smell and the presentation of the cocktail. The essential oils found in citrus peels give the drink a fresh and intense aroma. This is why they are often used in classic and premium cocktails.
How to use it?
When using a zester, the outer peel of the citrus is gently pressed and thin pieces are removed from the surface. Care should be taken not to go down to the white part (pith) because this part gives a bitter taste. The resulting peels can be added directly to the drink or sprinkled on top.
When using a channel knife, press along the citrus peel to create long, thin strips. These strips can be placed in a spiral over the cocktail or attached decoratively to the rim of the glass. If desired, the peel can be gently squeezed to release the oils into the drink.
